Corn Kebabs

Delicious spicy veggie skewers loaded with flavor!

Sweet corns kernels -2 cups, boiled & drained
Potatoes – 2, boiled & grated
Onion – 1, finely chopped
Ginger-1”, finely chopped
Green chilies-2, finely chopped
Red & green capsicum- 1 each, finely chopped
Red chili flakes- 1 tsp
Pepper powder- 1 tsp
Garam masala powder- 1 tsp
Coriander leaves – 1 bunch,finely chopped
Lemon juice- 1 tbsp
Bread slices – 3, roughly cut into small pieces
Rice flour- 1 tbsp
Besan flour -1 tbsp
Salt – To taste
Oil- As needed for frying
Popsicle sticks/skewers – As needed

Method: Crush half of the corns coarsely in a grinder without using water. Transfer this to a bowl. Add the grated boiled potatoes, remaining corns, finely chopped onions, capsicums, ginger, green chilies, red chili flakes, pepper powder, garam masala powder, rice flour, corn flour, coriander leaves, bread pieces, lemon juice, & salt. Knead the mixture into a smooth dough. Grease your hands with oil. Take small lemon size portion of the prepared corn mixture  & roll it into a ball. Pass the skewer through the center of the ball and spread it evenly out along the skewer into cylinder shaped kebabs. Repeat the process for the remaining mixture. Heat oil in a large pan. Deep fry the kebabs until they are crispy & golden in color. Drain them onto a paper towel. Drizzle with a bit of fresh lemon juice. Serve with coriander chutney.
