കുഞ്ഞി വട്ടയപ്പം / Mini Steamed Rice Cakes

One of the traditional & healthiest Kerala snack made up of a rice and coconut based batter that is steamed and can be served as a snack or as a main course with spicy curries of your choice!

Ingredients:
Rice flour- 2 cups
Coconut milk – 1 cup
Sugar – 1/4 cup
Dry yeast – 1/2 tsp
Water- 3 cups
Cardamom pods- 5, crushed
Raisins- A handful
Butter- As needed
Salt – A pinch

Method: In a small bowl, add yeast, sugar, and 1/4 cup of warm water. Mix it well and leave it aside until it becomes frothy. In a medium size pan, add 2 tbsp of rice flour with 1 cup of water and boil for 5 minutes. Remove from flame and allow it to cool. In a large bowl, add the prepared mixture, remaining rice flour, water, coconut milk, crushed cardamom, & salt and mix well until the batter is thick. Leave overnight or at least for 8 hours. Grease butter evenly on the moulds. Spoon in the batter into the moulds until they are filled half. Garnish with raisins. Steam on medium flame for 15-20 mins. Remove from flame, de-mould and serve warm. Enjoy!
