നാടൻ മത്തി ചുരുട്ട് / Grilled Fish Rolls

Try these lip smacking sardines rolls smeared in spices, wrapped in banana leaves, & grilled!

Ingredients:
Sardines: 7-8
Onion-1, finely chopped
Tomato-1, finely chopped
Ginger- 1/2 inch, finely crushed
Garlic- 3 pods- finely crushed
Red chili powder- 2 tbsp
Turmeric powder – 1 tsp
Black pepper powder – 1 tsp
Lemon juice- 2 tsp
Curry leaves- A sprig
Salt- To taste
Oil- As needed

Method: Clean & wash the sardines thoroughly. Make deep slits in the fish for the marination to sink in. Marinate the fish with half of the spice powders-red chili powder, turmeric powder, pepper powder, lemon juice, and salt. Leave it aside for 10-15 mins. Heat oil in a pan and sprinkle the curry leaves. Add the sardines and fry until they are cooked well. Drain them onto a paper towel. In the same pan, add the chopped onion, ginger, & garlic. Saute until they are translucent and the raw smell goes away. Add the chopped tomatoes and cook until they are soft and mushy. Add the remaining spice powders and mix well. Fry until the oil starts to separate. Remove from flame and keep aside. Wilt a banana leaf over fire to make it pliable and cut it into 1/4 size, enough to cover half of the sardine. Add a spoonful of the prepared masala over the leaf and spread it. Place one fried sardine over the masala and roll it with the banana leaf. Repeat the process for the remaining fish and the masala. Heat a tawa over medium flame and grease with oil. Gently place the fish rolls over the tawa and fry for a minute on each side. Remove from flame and serve hot with a bowl of steamed rice and your favorite curry. Enjoy!
