An amazing breakfast side dish prepared in the Christian homes in Kollam, Trivandrum, for Christmas!
Ripe plantains -2, cut into 1” round slices
Jackfruit – 1 cup, semi ripe pieces, seeds removed & sliced lengthwise
Thick coconut milk – 1 cup
Thin coconut milk – 1/2 cup
Cardamom pods- 3, crushed
Sugar- 1 cup
Rice flour- 1 tbsp
Clarified butter/ghee- 1 tsp
Method: Heat a claypot or pan on medium flame. Add the sliced plantains & jackfruits along with the crushed cardamom, & sugar. Mix well and cook until the fruits are caramelized. To this, add the thin coconut milk and milk well. Let it cook for 10-15 mins. Mix the rice flour in the thick coconut milk. Add this to the plantain mixture and combine well. Cook until the sauce thickens. Drizzle some ghee over. Remove from flame. Serve hot with steamed rice cake/puttu or appam. Enjoy!
