ഏത്തപ്പഴ സ്ട്യുവും പുട്ടും / Plantain Stew

A hearty rich broth that is full of goodness of coconut & plantains!

Ingredients:
Plantain – 1, cut into slices
Coconut milk – 2 cups
Cardamom- 3-4 pods
Cinnamon stick- 1”
Star anise- 1
Curry leaves- A sprig

Method: Heat oil in a pan. Splutter cardamom pods, cinnamon stick, curry leaves, and star anise. Add green chilies and ginger-garlic paste. Fry for 10 seconds. Add the sliced plantains and fry for 1-2 mins. To this, add 1 cup of milk & salt. Cook until the plantains soften. Add the remaining coconut milk and slowly stir. Remove from flame. Serve hot with steamed puttu / rice cakes and enjoy!
