പാലക്കാടൻ വെള്ള അവിയൽ / Palakkad Style Aviyal

This is a beautiful blend of colorful & nutritious veggies cooked to perfection & a very quintessential dish in the Kerala Sadya!

Ingredients:
Raw Plantain- 1, cut into long strips
Yam – 1/4 cup, cut into long strips
Green beans- 1/4 cup, cut into long strips
Carrots- 1/4 cup, cut into strips
Drumsticks- 3, cut into long pieces
Tindora- 1/4 cup, cut into long strips
Potato- 1, cut into long strips
White Melon/Kumbalanga- 1/4 cup, cut into long strips
Radish- 1/4 cup, leave as whole pieces
Grated coconut- 3/4 cup
Yogurt- 1 cup
Green chilies – 2-3
Cumin seeds- 1 tsp
Garlic – 2 pods
Curry leaves- A sprig
Coconut oil- As needed
Water – 1/4 cup
Salt – To taste

Method: In a large vessel, add the vegetables, water, & salt and cook until the vegetables are 90% done. Remove from flame. Grind the grated coconut, green chilies, cumin seeds, yogurt, & garlic pods into a coarse paste. Add this paste into the cooked vegetables and mix until the vegetables are completely blended with the coconut paste. Cook on low flame for another 5 mins adding a dollop of coconut oil and garnish with curry leaves. Remove from flame and serve hot with a bowl of steamed rice and other side dishes.
