മലബാറിൻ്റെ കണ്ണ് വച്ച പത്തിരി / Malabar Kannan Pathiri

These are traditional Malabar style fried bread. Also known as “Poo Pathiri” – Flower Pathiri as it resembles a flower, or “Madakku Pathiri” – Folded Pathiri!

Ingredients:
Wheat flour – 1/2 cup
All purpose flour/maida – 1/2 cup
Salt- To taste
Sugar – 1/2 tsp
Ghee/clarified butter- As needed
Water – As needed
Oil- As needed

Method: In a large bowl, add the wheat flour, all purpose flour, ghee, salt and sugar in a bowl and mix well. Add water little by little and knead it into a smooth dough. Grease the dough with oil and cover with a wet cloth. Leave it aside for 20 mins. Knead the dough again and divide into 4 equal size balls. Roll out each ball into a round shape and smear 1 tsp ghee on one side. Fold one half into the center, and then fold the other half to the center overlapping the first one. Brush ghee again on top and fold the other open side to the center, making a square shape. Roll it out using a rolling pin into square shape. Spread ghee and fold each corner of the square pathiri inside. Press it lightly and roll it out little. Repeat the process for the remaining balls. Heat oil in a pan. Deep fry each pathiri, keeping the folded side on top. Carefully flip to the other side and fry until golden brown. Drain on paper napkin. Serve hot with chicken curry and enjoy!
