Simple & delicious high-protein pancakes that are easy to make!
Pancake mix- 2 cups
Eggs- 2, lightly beaten
Milk – 1-1/2 cups
Ripe bananas- 3, mashed
Vanilla extract – 1 tsp
Fresh or frozen blueberries – 1 cup
Butter- As needed
Method: In a large bowl, mix together the pancake mix, eggs, milk, bananas and vanilla extract just until combined. Heat a skillet or griddle over medium heat. Grease the skillet with butter. Scoop 1/4 cup of the batter into the center of the skillet & scatter some blueberries on top & cook for a few minutes until the top begins to bubble and the sides are set. Using a spatula, gently flip the pancake and cook the other side until golden. Repeat the process with the remaining batter. Stack the pancakes and top with more blueberries, maple syrup or honey. Enjoy!
