Pecan & Sausage Mini Frittatas

Individual frittatas baked in a muffin tin are the perfect on-the-go breakfast for the busy schedules!

Ingredients:
Eggs- 5
Breakfast sausages- 4, cooked & finely chopped
Pecans (caramelized) – 1/2 cup, roughly chopped
Onion-1, finely chopped
Tomato- 1, finely chopped
Milk- 1/4 cup
Garlic- 2 pods, finely chopped
Paprika- 1/2 tsp
Black pepper powder – 1/2 tsp
Grated cheese – 1/2 cup
Salt – To taste
Butter- As needed

Method: Preheat the oven to 350 degrees Fahrenheit. Grease a 12-cup muffin tin generously with butter. In a bowl, add all the ingredients and mix well. Pour the mixture evenly into the muffin cups, filling them about halfway. Top with whole pecan on each muffin cup. Bake for 20 to 25 minutes until golden brown and puffed. Allow to cool for 5 minutes in the tin and then remove. Serve & enjoy as an on-the-go breakfast treat!
