A great finger food, these vegetarian lollipops are the perfect appetizers for one-handed nibbling!
Sun dried cassava (tapioca) – 1 cup, cooked (can also use fresh tapioca)
French fries – 8-10 fries
Shallots – 5-6, finely chopped
Ginger-garlic paste- 1 tsp
Crushed red chilies- 2 tsp
All purpose flour/maida- 1/2 cup
Breadcrumbs – 4 tbsp
Cornflour- 2 tbsp
Lemon juice- 1 tsp
Coriander leaves – A small bunch, finely chopped
Salt- To taste
Oil- As needed
Water- As needed
Method: In a bowl, add the cooked cassava, chopped shallots, giner-garlic paste, half of the crushed red chilies, coriander leaves, breadcrumbs, cornflour, lemon juice, & salt. Knead well to form a smooth dough.
In another bowl, make a slurry of maida & water without any lumps. Keep this aside. In another bowl, make a mixture of breadcrumbs and red chili flakes. Keep this aside.
Make lollipop shaped rolls of the tapioca mixture and dip each lollipop in the maida slurry. Roll it in the breadcrumb mix until coated well on all sides. Gently insert a french fry into the lollipop to resemble a stick. Repeat for the remaining dough. Heat oil in a pan. Once the oil is hot, carefully add the lollipop one by one without making it over-crowed. Deep fry until golden brown in all sides. Serve with a cup of hot tea or coffee and enjoy!
