Grilled Ajwain Masala Fish

Marinated with aromatic spices & infused by the spicy and pungent flavor of ajwain (carom seeds) gives an extra kick to this seafood delicacy!

Whole fish-1
Crushed ginger-garlic – 2 tbsp
Crushed green chilies- 2
Lemon juice- 1 lemon
Turmeric powder- 1 tsp
Besan powder- 2-3 tbsp
Pepper- powder – 1 tbsp
Ajwain (carmom seeds)- 1 tsp
Curd- 2 tbsp
Salt – To taste
Oil- As needed

Method: Clean, wash, and drain the fish. Marinate the fish with half of the ginger-garlic paste, half of the turmeric powder, lemon juice, & salt. Leave it aside for 10-20 mins. Heat oil in a pan. Add the remaining crushed ginger-garlic & green chilies and fry for 1-2 mins. Add the besan powder and roast for 2-3 mins. Add more oil if needed. Fry until the sauce turns brown in color. Do not overburn it. Remove from flame and keep aside. In a bowl, add pepper powder, ajwain, turmeric powder, salt, remaining lemon juice, oil, & the roasted besan mixture. Mix well to form a smooth paste. Marinate the fish with the prepared paste and leave it aside for 30 mins to an hour in the refrigerator. Preheat the oven to 350 degrees Fahrenheit. Place the marinated fish in a baking tray and grill it for 10-15 mins on each side. Remove from the oven. Serve hot with salad of your choice and enjoy!
