Egg Malai Curry

Hard boiled & fried eggs cooked in a rich creamy milk based sauce!

Eggs- 4, boiled
Onions – 2, thinly sliced
Green chilies – 2
Ginger-garlic paste – 1 tsp
Cumin powder – 1 tsp
Pepper powder – 1/2 tsp
Garam Masala powder- 1 tsp
Coriander leaves – A small bunch, finely chopped
Milk – 1/2 cup
Salt – To taste
Oil- As needed

Method: Deshell the boiled eggs & cut them into halves. Heat oil in a pan. Add the eggs and fry for 1 min. Transfer them to a plate and keep aside. In the same pain,add the sliced onions and saute until translucent. Add the ginger-garlic paste and green chilies. Fry for 1-2 mins. Remove from flame and allow it to cool. Once cooled, transfer them into a grinder and grind into a smooth paste. In the same pan, add more oil if needed. Add the prepared onion paste and fry for 1 min. Add the ginger-garlic paste & fry until the color changes. Reduce the flame & add the milk. Mix until well combined with the onion paste. Add the spice powders- cumin powder, pepper powder, garam masala powder, & salt. Mix well & simmer for a few min. Add the egg halves in the gravy with yolk side down to absorb the spices. Cover with a lid & cook for few mins. Gently flip the egg halves with yolk side up.  Add the chopped coriander leaves and mix well . Remove from flame. Serve hot with roti and enjoy!
