Red Cabbage Potato Stir Fry

A flavorful & lively stir fry that is tossed with delicious bits of grated coconut!

Ingredients:
Red Cabbage – 250 g, grated
Potato-1, cut into small cubes
Onion-1, thinly sliced
Grated Coconut – 1/2 cup
Dried red chilies – 2
Turmeric Powder – 1/2 tsp
Mustard Seeds – 1/2 tsp
Urad dal-1/2 tsp
Oil – As needed
Salt – To taste
Curry Leaves – A sprig
Vinegar/lemon juice- 1/2 tsp

Method: In a bowl, using your hands, mix together the grated cabbage, grated coconut, turmeric powder, and salt. Leave it aside. Heat oil in a pan. Splutter mustard seeds and dry chilies. Add the sliced onions and saute until translucent. Add the potato cubes and fry for 1-2 mins. Add the cabbage mixture. Sprinkle some vinegar cover the cabbage and mix well. Cover with a lid and cook over low flame for about 4-5 mins, stirring occasionally. Serve hot with a bowl of steamed rice.

* Lock in the color of the red cabbage by adding a touch of vinegar/lemon juice.
