പാൽ പൊറോട്ട / Kerala Milk Parotta

Soft layered flaky square flatbreads made with fresh milk!

Ingredients:
All purpose flour/maida-3 cups
Egg- 1
Sugar- 1 tbsp
Melted ghee/clarified butter- As needed
Warm milk- 1 cup
Melted ghee/clarified butter- As needed
Salt  – To taste

Method: In a large bowl, add the all purpose flour, salt, sugar, egg, & melted ghee. Add the warm milk little by little, and using your hands, knead into mixture into a smooth  dough. Cover the dough with a wet cloth so that it doesn’t become dry. Leave it aside for 1-2 hours. After an hour, divide the dough into 3 equal balls. Flatten the ball and roll it into a thin disc. Sprinkle some ghee over and spread over the parotta. Fold the parotta from one side lengthwise and cut it into 4-5 equal rolls. Repeat the process for the remaining balls. Sprinkle some maida and flatten the cut dough rolls into square/circular shaped parottas. Make similar parotta with the remaining rolls. Heat a tawa on medium flame. Fry both sides of each parotta until they are completely cooked and brown spots appear on them. Sprinkle some more ghee if needed. Remove from tawa. Repeat the process with remaining dough.  Serve hot with beef curry and enjoy!
