An extra zing twist to the healthy & popular dumplings that are well enjoyed with a cup of hot tea!
Rice/ragi flour- 2 cups
Jaggery- 1 cup, grated
Grated coconut – 1/2 cup
Cardamom powder – 1/2 tsp
Pineapple-1 ring, finely chopped
Apple- 1/2, finely chopped
Banana – 1/2, finely chopped
Kiwi- 1, finely chopped
Mango- 2 medium pieces, finely chopped
Raisins- 2 tbsp
Cashews – 2 tbsp, finely chopped
Ghee/clarified butter- As needed
Water- As needed
Salt- To taste
Method: In a pan, melt the jaggery. Add the grated coconut and cardamom powder and mix it until well blended. Add the chopped fruits to the coconut mixture and mix well. Keep this aside. Boil water in a pan. Add little salt and ghee to the water. Remove from flame. In a bowl, add rice/ragi flour. Add the boiled water to the rice/ragi flour little by little and mix it with a spoon. The consistency of the dough should not be sticky. Keep it aside for 5 minutes or till it is warm enough to handle. Grease your hands with little ghee. Knead the dough and make it into medium size soft balls. Take one ball at a time and place it in your palm. Press it with the other hand and make it thin. Start folding it inwards in such a way that you get a cup shape. Add 1-2 tsp of the prepared fruits filling, cover it and roll it back into a ball. Repeat the process with the rest of the dough and filling. Steam the kozhukattas in a steamer for 10-15 mins on medium flame. Remove from flame and allow it to cool slightly. Serve as a snack or breakfast.
