പച്ചക്കറി നിറച്ച കപ്പ ബിരിയാണി / Kerala Style Vegetable Tapioca Biryani

Tapioca is elevated to a healthy twist giving the traditional taste of the nonveg version and is among the tastiest delicacies that God’s Own Country has to offer!

Ingredients:
Tapioca/ Kappa- 1 kg, cut into small cubes
Onion-1, finely chopped
Ginger – 1 inch, finely minced
Garlic- 2 pods, finely chopped
Green chilies-2, finely chopped
Carrot- 1, finely chopped
Green peas- A handful
Bell peppers, red & yellow- 1/2 cup, finely chopped
Turmeric powder- 1/4 tsp
Red chili powder- 1 tsp
Coriander powder- 1/2 tsp
Garam masala powder- 1/4 tsp
Pepper powder- 1/2 tsp
Curry leaves- A sprig
Whole dry red chilies-2
Salt – To taste
Coconut oil – As needed
Water- As needed

Method: Clean, wash, & drain the tapioca. In a large vessel, boil water. Add the tapioca and salt. Cook until the tapioca is soft. Drain the water and mash it slightly with the backside of a laddle. Heat oil in a pan. Splutter mustard seeds, curry leaves, & dry red chilies. Add the ginger & garlic and fry for 1 min. Add the onion & green chilies and saute until translucent. Add the chopped carrot, peas, bell peppers and salt. Mix well. Fry for 3-4 mins. Add a cup of water and mix well. Cover with a lid and cook until the veggies soften. Add turmeric powder, chili powder, coriander powder, garam masala powder, and pepper powder. Cook the gravy until the oil starts to separate. Add the mashed tapioca and mix well. Season for salt. Sprinkle some coconut oil for more flavor. Remove from flame. Serve hot and enjoy!
