Sweet Potato Tikkis

The sweet succulence of the sweet potatoes combined with the tongue-tickling excitement of Indian spices gives this snack a healthy twist to the usual aloo tikki!

Sweet potatoes- 2, boiled
Onion-1, finely chopped
Ginger- 1”, finely minced
Green peas- 1/2 cup, boiled
Cumin powder – 1/4 tsp
Coriander powder-1/2 tsp
Garam masala powder- 1/2 tsp
Pepper powder- 1/2 tsp
Lime juice- 1 tbsp
Cilantro/coriander leaves- A small bunch, finely chopped
Breadcrumbs- 1 cup
Salt- To taste
Oil- As needed

Method: Preheat the oven to 325 degrees Fahrenheit. Mash the boiled potatoes and keep aside. Heat oil in a pan. Add the onions and sauté until translucent. Add green peas and fry until they soften. Add the spice powders & salt and mix well. Cook for another 1-2 mins until the oil starts to separate. Add the mashed sweet potatoes and coriander leaves & mix well. Cook until the mixture becomes dry enough form a smooth dough. Finally, sprinkle lemon juice. Remove from flame and keep it aside to cool. Grease your palms with some oil. Scoop 1/4 cup of the mixture in the form of a ball. Roll the ball in the breadcrumbs, making sure it is completely coated in the breadcrumbs and press it into a flat patty. Place the patty on the baking tray. Repeat the process for the remaining mixture. Bake the tikkis in the oven for 20-25 mins, until the bottom side becomes golden brown and crispy. Remove the baking tray and gently flip the patties using a spatula. Bake again for another 20-25 mins until the other side gets golden brown. Remove from the oven. Serve warm with coriander chutney and enjoy!
