Indian Style Pinwheels Pasta

Desi style pasta with tender pasta coated with flavorful spicy sauce, lots of veggies, & goodness of fresh herbs!

Pinwheels pasta- 1 cup
Onion – 1, finely chopped
Tomato -1, finely chopped
Yellow capsicum – 1/2, finely chopped
Ginger & garlic paste – 1 tsp
Green peas- 1/2 cup
Carrot – 1, cut into halves
Red chili powder – 1 tsp
Turmeric powder – 1/2 tsp
Garam masala powder- 1/2 tsp
Coriander powder – 1/2 tsp 
Tomato Ketchup – 1 tbsp
Dry fenugreek leaves/kasuri methi- A pinch
Oil – As needed< br> Salt- To taste 

Method: Cook the pasta as per package directions. Drain it and keep aside. Heat oil in a pan. Add ginger-garlic paste & fry. Add the chopped onions & capsicum and saute until translucent. Add the peas and carrots and fry until they are soft. Next add the chopped tomatoes and saute they turn mushy. Add the spice powders- turmeric powder, chili powder, garam masala powder, coriander powder, salt, and ketchup & mix well. Finally add the cooked pasta & sprinkle the kasuri methi & mix well.  Cook for another 1-2 mins. Remove from flame. Serve hot.
