സൂക്കിനിയും കൂണും കൂടി തോരൻ വച്ചതു / Kerala Style Zucchini Mushroom Stir Fry

A super healthy & flavorful stir fry that tastes yummy with a bowl of steamed rice!

Ingredients:
Zucchini – 2, cut into small cubes
Mushroom – 200 g
Onion- 1, finely chopped
Garlic – 2 pods , finely minced
Green chili- 1, finely chopped
Grated coconut- 1/2 cup
Turmeric powder – 1/4 tsp
Cumin seeds 1/2 tsp
Dry red chilies-2
Mustard seeds- 1/4 tsp
Curry leaves – A sprig
Salt – To taste
Oil- As needed

Method: In a grinder, coarsely pulse together the grated coconut and cumin seeds. Keep this aside. Heat oil in a pan and splutter mustard seeds, dry red chilies, and curry leaves. Add the chopped onions & green chili and saute until they are translucent. Add the mushrooms, turmeric powder, & salt. Mix well. Cover with a lid and cook for 5 mins until the mushrooms soften. Add the chopped zucchinis. Cover and cook for 5-6 mins. Add the coconut mixture and mix well to combine. Cook for another 1-2 mins until the water evaporates and the mixture gets a little dry. Remove from flame. Serve with steamed rice and side dish of your choice.
