ഏത്തപ്പഴം ഇലയട / Steamed Plantain-Rice Parcels

A traditional Kerala delicacy encased in a dough of rice flour + plantain, layered with sweet fillings, & steamed in banana leaf!


Ingredients:
Ripe plantains-3, steamed
Rice flour- 2 cups
Grated coconut- 1 cup
Jaggery powder- 1/2 cup
Cardamom powder – 1 tsp
Sesame seeds- 1/2 tsp
Salt- To taste
Water- As needed
Banana leaves- As needed
Ghee/clarified butter- As needed

Method: Remove the skin and black seeds from the plantains. Take 2 of the plantains and chop them into small pieces. Transfer it into a bowl. To this, add the grated coconut, cardamom powder, and jaggery powder. Mix well with your hands. In another bowl, add the rice flour, salt, & and the remaining plantain. Knead well into a smooth dough adding water little by little.

Wilt the banana leaves. Grease it with ghee. Take a scoop of the prepared plantain dough and spread it thinly on the banana leaf. Add a handful of the prepared plantain-coconut mixture on top of the dough. Fold it in the form of a parcel. Repeat the process for the remaining dough and coconut mixture. Place the parcels in a steamer and steam for 5-10 mins. Once the ada is cooked, remove from flame. Serve hot as an evening snack with your tea or coffee and enjoy!
