A super simple & nutritious side dish for your meal!
Spinach/palak/cheera – 1 bunch, chopped
Onion-1, finely chopped
Bell pepper- 1, finely chopped
Garlic pods- 2, finely minced
Green chilies – 2, finely chopped
Turmeric powder – ¼ tsp
Mustard seeds ½ tsp
Dry red chilies- 2
Curry leaves – A sprig
Coriander leaves- A small bunch, finely chopped
Salt – To taste
Oil- As needed
Method: Beat the eggs in a small bowl and keep aside. Heat oil in a pan. Splutter mustard seeds, dry red chilies, & curry leaves. Add the chopped onions & bell peppers. Saute until they are soft and translucent. Add the chopped spinach and cook until the water is evaporated. Add the beaten eggs and mix well. Fry until the eggs are completely scrambled. Add the chopped coriander leaves and mix well. Remove from flame. Serve hot with steamed rice or roti as a side dish and enjoy!
