A simple delicious & healthy stir fry recipe that goes well with a bowl of steamed rice!
Kovakka/ivy gourd/tindora – 1/2 kg
Shallots/pearl onions – 10, finely chopped
Green chilies -3, finely chopped
Grated coconut -1/2 cup
Turmeric powder – 1/2 tsp
Mustard seeds-1/4 tsp
Toor dal-1/4 tsp
Urad dal- 1/4 tsp
Curry leaves – A sprig
Oil – As needed
Salt- To taste
Method: Clean and wash the ivy gourds. Chop them into small pieces. Heat oil in a large pan. Splutter mustard seeds, urad dal, & curry leaves. Add the sliced shallots and sauté until translucent. Add the chopped green chilies, turmeric powder, and salt. Add the chopped ivy gourd and cook it covered over low flame. Keep stirring in between till the kovakka is soft and cooked. Add the grated coconut and cook again for 3 mins, stirring in between. Remove from flame and serve with steamed rice and other side dishes.
