Kale Pakoras / Crispy Kale Fritters

Crispy Indian style fritters that are perfect for snacking in the monsoon or winter days!


Ingredients :
Kale – 1 bunch
Chickpea flour- 3/4 cup
Rice flour- 1/2 cup
Corn flour – 1/4 cup
Onion-1, finely chopped
Green chilies-2, finely chopped
Garlic – 5 pods, finely chopped
Ginger – 1/2 inch piece, finely chopped
Red chili powder – 1 tbsp
Turmeric powder- 1/4 tsp
Garam masala- 1/2 tsp
Baking soda – 1 pinch
Lime juice – 1 tbsp
Curry leaves- A sprig
Salt – To taste
Oil – As needed for frying
Water- As needed

Method: Clean and wash the kale. Chop the kale into small pieces using a chopped. In a large bowl, mix together the chickpea flour, rice flour, spice powders, ginger, garlic, baking soda, salt and lime juice. Add enough water to make the batter smooth and neither too watery nor too thick. The right consistency makes the fritter super crispy. To this batter, add the chopped kale, sliced onions, & green chilies. Mix well.

Heat oil in a large pan. Once the oil is hot, add curry leaves and let it splutter. Then carefully add small handfuls of the prepared kale mixture into the hot oil. Fry on all sides until they are nice golden brown in color. Drain them in the paper towel. Serve hot with mint chutney and enjoy!
