Grab these delicious chicken sliders that ooze with melted cheese and whip up these in minutes!
Slider buns/ small sized buns – 9
Chicken breast- 250 g, cut into medium size pieces
Onion- 1, finely chopped
Green chili-1, finely chopped
Garlic – 2 pods, finely chopped
Ginger – 1″ piece, finely chopped
Turmeric powder – 1/4 tsp
Cumin powder – 1/4 tsp
Garam masala powder – 1/4 tsp
Chili powder – 1 tsp
Tomato paste – 4 tbsp
Sweet chili sauce – 7-8 tsp
Grated cheddar cheese – 1/2 cup
Mozzarella cheese – 1/4 cup
Coriander leaves – A small bunch, finely chopped
Melted butter- As needed
Water – As needed
Salt – To taste
Oil- As needed
Method: Clean, wash, & drain the chicken pieces. Marinate the chicken pieces with turmeric powder, chili powder, and salt. Leave it aside for 15-20 mins. In a large pan, boil the chicken until completely cooked. Drain the water and shred the chicken. Keep it aside. Heat oil in a pan. Add the chopped onions and saute until golden brown. Add the green chili, ginger-garlic and fry until the raw smell goes away. Add the remaining spice powders and fry for 1-2 mins. Add in the tomato paste and mix well. Add the shredded chicken and a little water. Season to taste. Allow it to cook until the gravy thickens. Top with chopped coriander leaves and mix well. Remove from flame and keep aside.
Preheat the oven to 300 degrees Fahrenheit. Grease a baking tray with butter. Cut the rolls in half lengthwise and place in a pan. Generously sprinkle some melted butter & mozzarella cheese on bottom half of the sliders. Spread the sweet chili sauce on each slider. Add a generous spoonful of the chicken filling on top of the sauce followed by a generous amount of cheddar cheese. Cover the top part of the bun and sprinkle some butter & cheese on the top. Cover with an aluminium foil and bake for 10-15 mins or until the cheese melts. Remove from oven and serve warm. Enjoy!
