Rava / sooji / semolina – 1/4 cup
Potatoes- 2, boiled & mashed
Green peas – 1/2 cup, boiled
Green chilies- 2, finely chopped
Dry chili flakes- 1/2 tsp
Turmeric powder- 1/4 tsp
Garam masala powder – 1/2 tsp
Cumin powder / jeera powder – 1/4 tsp
Chat masala- 1/2 tsp
Coriander leaves- A small bunch, finely chopped
Sugar – 1/2 tsp
Salt – To taste
Water – As needed
Oil- As needed for deep frying
Method: In a bowl, mix together the wheat flour, rava, salt, & 1 tsp oil. Add water little by little and knead into a smooth dough. Rest the dough for 10-20 minutes.
In another bowl, mix together the mashed potatoes & green peas with green chilies, chili flakes, turmeric powder, chat masala, cumin powder, coriander leaves, & salt. Keep this aside. Divide the dough into 2 large balls. Using a rolling pin, flatten the ball into a big disc. Spread half of the potato mixture on top of the rolled dough & flatten it using the rolling pin. Gently roll the disc tightly from one corner to the other. Brush a little water on the edges of the roti and press lightly to seal the ends. Cut the dough into equal sized slices & flatten each slice by pressing gently between the palms of your hands. Repeat the process for the remaining dough and potato mixture. Heat oil in a pan. Deep fry the pinwheels until golden and crisp. Transfer them to a paper towel. Serve with ketchup and enjoy!
