Gorgeous pink colored savory dumplings that can be made part of a healthy breakfast or snack!
Beetroot -1 cup, finely grated
Dosa batter – 2 cups
Onion-1, finely chopped
Ginger-garlic paste- 1 tsp
Mustard seeds- 1/4 tsp
Dry red chili flakes – 1/2 tsp
Curry leaves- A small sprig, finely chopped
Coriander leaves- A small bunch, finely chopped
Salt- To taste
Oil- As needed
Method: Heat oil in a pan. Crackle mustard seeds. Add the chopped onions and sauté until translucent. Add the chili flakes and mix well.Add grated beetroots and salt. Cook for 5-6 mins until the beetroot softens. Remove from flame and allow it to cook for 5 mins. Add this mixture to the dosa batter and mix thouroughly. Heat a paniyaram pan. Grease each hole with 1 tsp of oil. Gently pour in a ladle of the prepared batter to each hole. Cook until they turn golden. Carefully flip other side using a knife or skewer. Cook until both sides turn golden. Once each paniyaram is cooked, remove from the pan and pour another batch of batter and repeat the process. Serve with your favorite chutney and enjoy!
