Frozen french fries – 1 cup, thawed
Onion- 1/2, finely chopped
Tomato-1/2, finely chopped
Green chilies-2, finely chopped
Coriander leaves- A small bunch, finely chopped
Salt- To taste
Oil- As needed
Method: Heat oil in a deep bottomed vessel. Once the oil is hot, add the thawed french fries and fry until golden brown. Drain onto a paper towel. Crack the eggs in a small bowl. To this, add the green chilies, onions, tomatoes, and salt. Whisk until well combined. Heat the pan and add 1-2 tbsp of oil. Add the fries and spread it evenly on the pan. Pour the egg mixture on top of the fries and spread it evenly over the fries. Garnish with chopped coriander leaves. Reduce the flame and slow cook for 1-2 minutes. Using a plate as a cover to the pan, carefully flip the omelette to the plate, and then back to the pan. Cook for another 1-2 mins until it gets cooked on the other side. Again, using the plate, gently flip the omelette back to the pan. Serve hot and enjoy!
