A surprise fun twist on a classic banana bread flavor!
Regular oats – 1 cup
All purpose flour – 1/2 cup
Ripe bananas- 3
Baking soda -1 tsp
Brown sugar- 1/2 cup (optional)
Biscoff spread/Cookie Notti spread- 2 tbsp (optional)
Lotus biscuits – 5-6
Sweetened coconut flakes- 2-3 tbsp
Honey/maple syrup – 1 tbsp
Lemon juice- 1/2 tsp
Yogurt- 1 tsp
Method: Preheat the oven to 160ºC. In a bowl, mash the bananas with the back of a fork. To this, add the biscoff/cookie notti spread, lemon juice, & yogurt and mix well together. In a large mixing bowl, add the dry ingredients-the oats, all purpose flour, baking soda, sweetened coconut flakes, and sugar. Mix them together. Scoop the wet ingredients into the dry ingredients and mix until just combined. Crush 2-3 of the lotus biscuits and add it to the mixture. Drizzle with honey or maple syrup. Grease a muffin tin. Spoon the mixture into a muffin molds. Cut a lotus biscuit into half and push it in the middle of the batter. Cover the top of the pan with aluminium foil to stop the biscuits from burning. Bake for 25-30 mins or until a toothpick inserted into center comes out clean. Remove from the oven and pop onto a cooling tray. Enjoy!
