This flavorful & spicy chicken curry made with a blend of fragrant spices is one of the popular dishes across India!
Chicken – 1 kg, cut into medium size pieces
Bell peppers/capsicum – 2 medium ones (red and green ones), diced
Onions- 2, diced into medium cubes
Tomato- 1, finely chopped
Ginger- 1 tbsp minced
Garlic – 4 pods, minced
Whole spices – 2 tbsp coriander seeds, 2 tsp cumin seeds, 1 tsp fenugreek seeds, 1 tsp black peppercorns, 4 whole dried red chilies
Oil- As needed
Water- As needed
Salt – To taste
Method: Dry roast the whole spices for 2-3 minutes until they turn golden brown. Remove from heat and allow it to cool. Grind the roasted spices in to form a coarse powder. Keep this aside. Heat oil in a kadai over medium flame. Add the diced onions and sauté until lightly browned. Add crushed ginger and garlic and fry until the raw smell goes away. Add half of the prepared spice powder and mix well. Add chopped tomatoes and cook until they are soft and mushy. To this add the marinated chicken and half cup of water & mix well. Cover with a lid and cook on medium flame for 5-10 mins, stirring constantly. Once the chicken is nearly cooked, add the remaining spice powder, garam masala and diced bell peppers. Cook and covered for another 5 mins until the gravy thickens. Remove from flame and serve hot with roti, paratha, or rice.
