Pink Uttappam / South Indian Style Beetroot Pancakes

An absolute delicious & healthy breakfast – thick pancakes loaded with veggie power!


Dosa batter- 2 cups
Beetroot-2, grated
Onion-1, finely chopped
Green chilies- 2, finely chopped
Cilantro- A small bunch, finely chopped
Cumin powder- 1/4 tsp
Salt- To taste
Ghee/clarified butter- As needed

Method: In a large bowl, add the dosa batter, grated beetroot, chopped onions & green chilies, cilantro, cumin powder, and salt. Mix this until well combined.  Heat a tawa or pan. Grease it well with some ghee. Once hot, pour a spoonful of the batter into the center of the pan. Spread it evenly into a thick circle. Once bubbles starts to form, drizzle some ghee on top of the pancake and around the edges. Gently flip it and cook on the other side. Once done, remove and serve to a plate. Repeat the process with the remaining batter.
