Fluffy Blueberry Pancakes

Fluffy & golden pancakes loaded with plump and sweet fresh blueberries that melt in your mouth!



All purpose flour – 1 cup
Milk – 3/4 cup
Sugar – 2 tbsp
Baking powder- 1 tsp
Baking soda – 1/2 tsp
Egg – 1
Fresh blueberries- 1 cup
Melted butter – As needed
Salt – To taste

Method: In a large bowl, whisk the dry ingredients together. Add in the egg, milk, and melted butter into the dry ingredients and mix until well combined. Heat a nonstick pan over medium heat. Brush lightly with some butter. Pour about 1/3 cup of batter into the pan and gently spread it. Arrange a few blueberries on top. Cook until little bubbles form on the top and the edges start to firm up and turn golden brown. Flip and cook for another 1-2 minutes until the pancake is cooked through. Serve with maple syrup and more fresh blueberries if desired. Enjoy! YUM, YUM, YUM.
