Broccoli Mushroom Quesadillas

A kids friendly snack that is irresistibly delicious and loaded with veggies and cheese!


Whole wheat mini tortillas- 8
Grated mozzarella/cheddar cheese- 1/2 cup
Onion-1, finely chopped
Broccoli florets- 1 cup, chopped
Mushrooms – 1 cup, chopped
Pepper- 1 tsp
Oil- As needed
Salt- To taste

Method: Heat oil in a pan. Add the chopped onions and saute until translucent. Add the mushrooms, pepper, and salt and fry for 2-3 mins. Add the chopped broccoli and saute for another 4-5 mins until the veggies are cooked. Remove from flame. Heat a nonstick tawa, griddle, or a sandwich maker. Place a tortilla on the tawa/griddle. Sprinkle 1/4 cup of cheese all over it. Spread a generous scoop of the cooked vegetables over the cheese. Sprinkle more cheese. Place the second tortilla over. Cook until the cheese starts to melt for about a minute and there are nice golden brown marks on either side. Repeat the process with the remaining tortillas and veggies. Serve as a healthy snack for your little ones.
