Healthy Oats & Veggie Pancakes

Have a healthy start to the day with these easy & delicious savory pancakes! 


Oats – 1 cup
Semolina/sooji/rava- 1/2 cup
Rice flour-3 tbsp
Shredded carrot- 1 cup
Bell pepper- 1, finely chopped
Onion-1, finely chopped
Green chili-1, finely chopped
Cilantro- A small bunch, finely chopped
Buttermilk- As needed
Butter- As needed
Salt- To taste

Method: Grind the oats into a coarse powder and keep aside. Melt 1 tbsp of butter in a pan. Add the chopped onions, green chilies, and bell pepper. Saute until soft. Add the carrots and cook until soft. Remove from flame and keep aside. In a large bowl, mix together the oats powder, semolina, rice flour, cooked veggies, and salt. Mix well. Add the buttermilk and mix well for form a dosa batter consistency. Heat a tawa. Grease it with butter. Pour a ladle of the batter into a tawa and cook on medium flame for 1-2 mins until the edges turn golden brown. Flip and cook on the other side until golden. Transfer to a serving plate. Repeat the process with the remaining batter. Serve hot with chutney or curry of your choice.
