One-Pan Lemon Butter Chicken

An absolutely delicious quick weeknight meal that is full of flavor and smothered in garlicky butter sauce! 


Chicken thighs (bone-in or boneless) – 4-5 pieces
Spinach – 1 cup, chopped
Paprika powder- 2 tbsp
Chicken broth- 1/2 cup
Heavy cream – 1/2 cup
Garlic pods- 3, finely minced
Black pepper powder- 1/2 tsp
Unsalted butter – As needed
Parmesan cheese – 1/2 cup, grated
Lemon juice- 2 tsp
Salt – To taste

Method: Clean, wash, and drain the chicken. Marinate the chicken with paprika, pepper powder, lemon juice, and salt. Preheat the oven to 400°F. Melt butter in a large pan. Add the marinated chicken and fry for 4-5 mins until crisp and golden brown on both sides. Remove from flame. In the same pan, melt butter. Add the chopped garlic until the aroma arises. Add the chicken broth, heavy cream, chopped spinach, and Parmesan cheese. Cook until the sauce is thickened and the spinach is wilted. Remove from flame. Transfer the contents into an ovenproof dish. Add the cooked chicken and bake for 15 to 20 minutes. Serve warm.
