Lemony Zucchini Cake

A sweet & delicious cake that is loaded with full of tangy flavor!


Yellow cake mix – 1 pack
Zucchini – 2 cups, grated
Instant vanilla pudding – 1 small pack
All purpose flour – 1/2 cup
Milk – 1/2 cup
Eggs -2
Lemon zest – 1 tbsp
Vanilla extract – 1 tsp
Water- As needed

Method: Preheat the oven to 350 degrees.  Grease a rectangular baking pan and set keep aside. In a large bowl, mix together all the ingredients- cake mix, vanilla extract, pudding powder, all purpose flour, eggs, grated zucchini, lemon zest, milk, and water until well combined into a smooth batter. Pour the prepared batter into the greased pan and bake for 40-45 mins or until a toothpick inserted at the center of the cake comes out clean. Remove from oven and allow it to cool. Cut into slices and enjoy with tea!
