Tuna & Veggies Pizza

Try a unique twist to the regular pizza Fridays!


Pizza dough – 400 g
Yellow zucchini – 1, sliced into thin rounds and halved
Eggplant- 1 small, sliced into thin rounds and halved
Bell peppers – 1, cut lengthwise
Canned tuna- 1 can, drained
Tomato sauce – 1/2 cup
Mozzarella cheese – 1/2 cup, shredded
Olive oil- 1 tbsp

Method: Preheat oven to 400 degrees. Spray a 8 inch round baking sheet with nonstick cooking spray. Place the pizza dough on a lightly floured surface, and using a rolling pin, roll the dough into a large circle and transfer it to the baking sheet. Using a pastry brush, spread the olive oil over the dough. Spread the tomato sauce over the dough. Top with mozzarella cheese. Add the crumbled tuna and veggies evenly over the mozzarella layer. Bake for 10-15 mins or until crust is golden brown. Remove from oven and allow to cool slightly before slicing. Enjoy!
