Make your morning breakfast a bliss with these mini pepper egg boats that are filling and comforting!
Mini peppers – 6, cut lengthwise and de-seeded
Mozzarella cheese- 1/2 cup grated
Pepper powder- 1 tsp
Cilantro/parsley – A small bunch, finely chopped
Olive oil – 2 tbsp
Salt – To taste
Method: Preheat the oven to 350 degrees Fahrenheit. Brush the inside and outside of the pepper halves with olive oil. Place them with the cut-sides up on to a baking sheet. In a small bowl, whisk the eggs with mozzarella cheese, pepper powder, cilantro, and salt. Gently pour 1-2 tsp of the egg mixture into the pepper halves. Carefully place the egg boats into the oven and bake for 10 mins or until lightly charred and slightly softened and the eggs are cooked well. Remove from the oven. Sprinkle with chopped cilantro and serve hot.
