Wheat flour – 2 cups
Green peas – 1 cup, boiled
Green chilies – 2, finely chopped (optional)
Turmeric powder- 1/ 4 tsp
Coriander powder – 1/2 tsp
Coriander leaves – A small bunch, finely chopped
Oil – As needed for frying
Salt- To taste
Water- As needed
Method: Grind the boiled green peas, green chilies, and coriander leaves into a coarse paste. In a large bowl, mix together the wheat flour, the prepared green peas paste, turmeric powder, coriander powder, salt, & 1 tbsp of oil. Knead into a smooth dough adding enough warm water. Cover and keep aside for 10-20 minutes. Divide the dough into lemon sized balls. Take each ball, and using a rolling pin, roll the dough into a circular shape. Repeat the process with the rest of the balls. Heat oil in a frying pan or kadai. Check if the oil is hot by dropping a small tiny ball of the dough into the oil, and if it immediately floats on the surface, the oil is hot and ready for frying. Gently slip a poori into the oil. Using a slotted spoon, press down the poori a little to make it fluff up. Flip over to the other side and continue frying until it gets golden in color. Drain onto a paper towel. Repeat with the other pooris. Crispy and flavorful pooris are ready to be relished with curry of your choice.
