Fruity Orange Raisin Bread



Seedless oranges- 2, cut into small pieces with skin
All purpose flour – 2 cups
Granulated sugar – 1/2 cup
Baking powder – 2 tsp
Baking soda – 1 tsp
Ground cardamom- 1/4 tsp
Milk – 1/2 cup
Vanilla extract – 1 tsp
Raisins – 1/2 cup
Cashew nuts – 10, chopped
Oil – 4 tbsp
Salt- A pinch
Warm water – 1/2 cup
Unsalted butter- As needed

Method: In a blender, blend together the orange pieces, egg, milk, oil, & vanilla extract. Keep it aside. In a large bowl, mix together the flour, sugar, baking powder, baking soda, cardamom powder, and salt. Add the orange mixture and warm water. Mix well to form a smooth mixture. Preheat the oven to 350 degrees Fahrenheit. Grease a loaf pan generously with butter. Pour in the prepared mixture into the pan. Bake for about 50 mins or until a toothpick inserted into the center comes out clean. Remove from the oven and allow it to cool. Cut into slices and enjoy. Remaining slices can be wrapped in plastic wrap and frozen in airtight container.
