പന്നി ഇറച്ചിയിൽ ഇടി ഇറച്ചി കൂട്ട് / Kerala Style Pulled Pork Roast

Impress & treat your loved ones with delicious & flavorful twist on the traditional “falling apart” pulled pork recipe!

 

Ingredients:
Pork shoulder – 1 kg
Shallots – 10-12, thinly sliced
Green chilies – 2, finely chopped limeGarlic – 2 cloves
Turmeric powder – 1/2 tsp
Black Pepper Powder – 3 tsp
Red chili powder – 3 tsp
Meat masala – 2 tsp (optional)
Garam masala – 2 tsp
Lemon juice- 2 tbsp
Curry Leaves – A sprig
Salt- To taste
Oil- As needed

Method: Trim all visible fat from the pork. Make slits on the surface of the meat using a knife. Wash and drain the the pork. Marinate the meat with half of the spices – turmeric powder, red chili powder, pepper powder, lemon juice, & salt. Refrigerate for 4 hours or overnight. Preheat the oven to 350 degrees. Wrap the pork in an aluminum foil and bake it for 3-4 hours. You can also cook it in the slow cooker for 6-7 hours on low heat. Once the meat is cooked, remove it from the oven or slow cooker. Using two forks, shred the meat into thin slices. Heat oil in a pan. Splutter mustard seeds and curry leaves. Add the chopped shallots & green chilies. Saute until translucent. Add the chopped ginger and garlic and saute until the raw smell disappears. Add the chopped tomatoes and cook until soft and mushy. Add the spice powders- turmeric powder, chili powder, pepper powder, & garam masala powder. Fry until the raw smell goes away and the masala becomes thick. Add the shredded pork into the masala and mix well. Stir fry for 5-6 mins until it becomes dry. Serve hot with rice, chapati, or as a wrap.
