An easy & simple stir fry recipe for those lazy days!
Grated coconut – 1/2 cup
Green chilies – 2, finely chopped
Pearl onions/shallots – 10, finely chopped
Garlic – 2 cloves, finely chopped
Curry leaves – A sprig
Oil- As needed
Salt- To taste
Mustard seeds- 1/4 tsp
Method: Clean & cut the brinjal into small cubes. In a grinder, blend together the grated coconut, green chilies, half of the chopped shallots, and chopped garlic into a coarse paste. Heat oil in a pan. Splutter mustard seeds and curry leaves. Add the chopped shallots and saute until golden brown. Add the diced brinjal, salt, and the prepared paste. Cover with a lid and cook on medium flame for 10-15 mins. When the brinjal turns soft, add whipped eggs and mix well. Keep stirring until the eggs are scrambled & mixed well with the brinjal masala. Remove from flame and serve hot with rice or roti.
