Healthy, delicious, & nutritious Indian flatbread made with the goodness of veggies & delicately flavored with spices!
Whole wheat flour – 2 cups
Zucchini – 1 cup, grated
Carrots – 1 cup, grated
Cumin powder – 1/2 tsp
Dry mango powder- 1/2 tsp (optional)
Grated ginger – 1″ piece
Green chilies- 2, finely chopped
Salt -To taste
Oil- As needed
Ghee/clarified butter- As needed
Water- As needed
Method: In a large bowl, combine all the ingredients to form a soft and pliable dough. Divide the dough into lemon sized balls. Dust with flour and roll each ball out into a round disc. Heat a tawa or griddle over medium heat. Place the paratha on the tawa and cook until brown spots form on both sides, flipping occasionally. Remove from the tawa and spread some ghee on both sides. Keep the parathas warm by stacking them in a kitchen towel. Serve hot with curry of your choice.
