Roasted Bell Pepper Bruschetta

The sweetness of the peppers with the mild crunchy bite of onions makes this easy appetizer that is delicious & full of color!


Red pepper – 1/2 diced into small cubes
Yellow pepper – 1/2, diced into small cubes
Onions -1, finely chopped
Garlic cloves- 2, minced
Coriander leaves- A small bunch, finely chopped
Oregano – 1/2 tsp
Baguette – 1/2, sliced into 1″ thick slices
Pepper powder – 1/2 tsp
Cream cheese- 2 tsp
Salt – To taste
Olive oil- 2 tbsp

Method: Roast the bell peppers and chopped onions. In a bowl, mix together olive oil, oregano, coriander leaves, salt, pepper, & minced garlic. Toast bread. Mix roasted bell peppers & onions with the bell pepper mixture. Slightly grease the baguette slices with olive oil and toast it in the oven for 5-10 mins. Gently spread a thin layer of cream cheese on the toasted bread and top it with the prepared mixture. Serve immediately.
