Methi Paratha (Roti) / Indian Style Fenugreek Flatbread

Try this shallow fried traditional Indian flatbread made of fenugreek leaves which is not only healthy but filling too. 



Whole wheat flour – 2 cups
Fresh/frozen fenugreek leaves – 1 cup, finely chopped
Cumin powder- 1/2 tsp
Red chili powder – 1/2 tsp
Turmeric powder – 1/2 tsp
Yogurt/curd- 1/2 cup
Salt – To taste
Water – As needed
Oil- As needed
Ghee/clarified butter – As needed


Method: In a pan, add 1 tsp of oil and saute the chopped methi leaves. This helps to reduce the bitterness of the methi leaves. In a medium bowl, add the whole wheat flour, cooked methi leaves, chili powder, turmeric powder, cumin powder, curd, 1 tsp of ghee, & salt, and mix well.  Add water little by little and combine them to knead a smooth pliable dough. Keep it aside for 15 mins. Divide the dough into equal sized balls. Dust the rolling area, and using a rolling pin, roll the balls into thin circles. Heat a tawa or pan over medium flame. Place the roti over the tawa and drizzle ghee. Cook the roti on both sides until brown spots appear. Transfer to a plate. Repeat the process with the remaining dough. Serve the rotis with raita and pickle.
