An elegant and easy spin on the regular style pizza with 3 main toppings-potato, bacon, & scallions- bringing the bold Irish flavor!
Pillsbury Thin Crust Refrigerated Pizza Dough – 1 can
Potatoes – 1, diced into small cubes
Bacon- 3 strips, thinly sliced
Mozzarella cheese – 2 cups, shredded
Irish cheddar- 1/2 cup, shredded
Scallions – 3, trimmed and thinly sliced
Sour cream – 1/4 cup
Milk- 1 tbsp
Pepper powder – 1 tsp
Thyme- 1 tsp
Salt – To taste
Oil- As needed
Method: Preheat the oven to 400 F. Wash and remove the skin of the potato. Dice the potato into small cubes. In a bowl, add the diced potatoes and toss it with olive oil, salt, and pepper powder. Heat oil in a pan and fry the potatoes until golden brown in color. Keep it aside to cool slightly. In the same pan, add the bacon strips and cook over medium heat until half cooked. Transfer to a paper towel and keep it aside. Cut into small slices once cooled. Line a rimmed pizza pan with parchment paper. Gently unroll the dough onto baking sheet and sprinkle mozzarella & Irish cheddar over the dough. Scatter the fried potatoes, bacon, and chopped scallions over the mozzarella & Irish cheddar. In a small bowl, mix the sour cream and milk and drizzle over the pizza. Sprinkle with thyme and bake until the crust is golden brown or until cheese is melted and bubbly for about 15-20 minutes. Cut into 6 or 8 pieces. Serve immediately.
