Kalimirch Baingan / Indian Style Black Pepper Eggplant Stir Fry

This spicy eggplant stir fry is flavorful and easy to make. The earthly aroma of the pepper enhances the taste of the brinjals bringing out the flavors well.


Eggplants/brinjal/aubergine – 8 small ones
Onion- 1, thinly sliced
Mustard seeds – 1/2 tsp
Turmeric powder – 1/2 tsp
Black pepper powder- 2 tsp
Salt – To taste
Oil – As needed

Method: Clean and wash the eggplants. Dice them into small cubes and them them in salted water for 15 mins. Heat oil in a pan. Add the sliced onions and saute until they become soft and translucent. Add the diced eggplants and saute on medium flame for 4-5 minutes. Add turmeric powder, black pepper powder, and salt. Mix well. Cover and cook on low flame for 5-6 mins until they become soft and tender. Serve hot kalimirch baingan with rotis or rice.
