Okra is an ideal low-calorie vegetable for weight loss that contains no saturated fat or cholesterol. The fiber of okra has superior qualities in maintaining weight loss and are rich sources of minerals & vitamins. The flavor of coconut makes this simple & healthy dish even more delicious.
Vendakka /Ladies finger/ Okra – 1 cup, cut into small rounds
Mustard seeds – 1/4 tsp
Green chilies – 2, finely chopped
Garlic – 1 clove, finely chopped
Onion – 1, finely chopped
Turmeric powder- 1/2 tsp
Cumin powder – 1/4 tsp
Grated coconut- 2 tbsp
Water – as required
Salt – to taste
Coconut oil- 2 tbsp
Curry leaves – A sprig
Method: Heat oil in a pan. Add mustard seeds and let it splutter. Add curry leaves, green chilies, garlic, and saute well. Add the chopped onion and saute until the onion turns translucent. Add the okra, turmeric powder, cumin powder, and salt and mix well. Cover with a lid and cook on low flame for 10 mins. Stir occasionally to avoid burning. When the okra is softened, add grated coconut and combine well. Cover and cook for another 5 mins. Serve hot with rice as a side dish.
