Ham and Egg Salad Cucumber Cups

A perfect Spring or Easter delicious appetizer-that is also an alternative to crackers. These are easy to make and a crowd favorite!



Cooked ham – 2 cups, cubed into small bite pieces

Eggs – 4 hard boiled eggs

Greek yogurt – 1 cup

Mayonnaise – 1/4 cup

Mustard sauce – 1/2 tsp

Cucumbers- 2 sliced into 1 inch pieces

Fresh parsley leaves  – A handful, finely chopped

Pepper & Salt – To taste


Method: Place the ham in a food processor and process until finely chopped. Transfer it to a large bowl and keep aside. Chop the eggs in the food processor. Add them into the same bowl with the ham. Add the remaining ingredients in the bowl and mix them all together. Scoop out a little of the center of the cucumber slices making sure to leave the bottom of the cucumber slices, creating a cup shape. Fill the cucumber cups with the ham and egg salad and top with the finely chopped parsley leaves. Serve cold.
