Bird’s Nest Breakfast Cups

A fun way to have eggs and bacon all in one easy go!


Bacon strips – 8
Mushrooms-10, cleaned & thinly sliced
Cheddar cheese- 1/2 cup, grated
Cilantro leaves- A small bunch, finely chopped
Oil-As needed
Salt- To taste

Method: Heat oil in a pan and cook the bacon over medium flame until partially cooked. Drain them onto a paper towel. In a bowl, whisk the eggs, mushrooms, and cheese together. Preheat the oven to 300 degrees Fahrenheit. Coat the muffin tray with cooking spray. Wrap 1-2 bacon strips around the inside of each cup. Fill each cup with the egg mixture. Top with more cheese if desired. Bake for 15-20 mins until the cheese melts and the egg is cooked. Remove from oven and allow to cool before removing from the pan. Sprinkle with the chopped cilantro and serve as on-the-go breakfast.
