കടയ്ക്കാവൂർ കാവടി / Kadakkaavur Kavadi

Try this variety and traditional homemade snack that originates from the town of Kadakkavoor, located in Thiruvananthapuram (Trivandrum) District of Kerala. The uniqueness is the shape & design of the snack which represents “kavadi” – cowrie shells used by astrologers of Kerala. 

 

Ingredients:
Rice powder – 1/2 cup
Egg-1
Sugar- 2-3 tbsp
Coconut milk – 3-4 tbsp
Cardamom powder- 1/4 tsp
Cumin seeds- 1/4 tsp
Baking soda- A pinch
Ghee- 1-2 tbsp
Salt- To taste
Oil- As needed

Method: In a bowl, whisk together the egg and sugar until fluffy. Keep this aside. In another bowl, mix together the rice flour, cardamom powder, cumin seeds, baking soda, and ghee. Add the egg-sugar mixture and mix well until coarse lumps are formed. Next add the coconut milk little by little until a smooth dough is formed. Make small balls out of the dough. Take each ball and roll it into an oval shape. Take a fork or a new clean comb and press it on the center of the roll lengthwise to make a straight dot design. Repeat the process with the remaining balls. Heat oil in a pan. Gently drops the rolls into the hot oil. Fry them until golden brown on all sides. Drain onto a paper towel. Serve as a snack with your evening tea.
